Quinoa Lentil Salad with Fresh Basil and Beans


A couple of weeks ago, we brought this salad with us to a friend’s for dinner. They actually asked for our leftovers! Luckily, I had reserved enough ingredients to make up another batch for us at home.



Quinoa Lentil Salad with Fresh Basil and Beans


4 cups cooked, cold, Quinoa
2 cups cooked, cold, black lentils
2 cups grape tomatoes, or diced tomatoes if you are in a pinch
2 cups cooked, cold, dark kidney beans
2 cups cooked, cold, garbanzo beans
2 cups fresh basil leaves, chopped loosely
Juice of 1 lemon
¼ cup olive oil
Salt and pepper to taste

Toss first six ingredients together. Drizzle with olive oil, lemon juice, salt and pepper. Toss again.

As a main dish, this will serve 4. As a side dish it will serve 8. This salad it great served immediately, or can be made a day before. Also makes for great leftovers!
